Combine all ingredients in a mixer and blend until dough is fully developed.
Next, divide dough into 1.7-2.6 oz (50-75 g) portions and shape into balls. Then, sheet very thin (approximately 1/8 in (.3 cm) using plenty of flour.
Place into a 450°F (232°C) deck oven and bake until pita begins to puff and browned speckles begin to form. Remove from oven, stack and let cool.
