Blend flour, Star’Bake Rustic, and sugar for 1 minute on your mixer’s first speed. Next, add water and unsalted butter. Continue mixing for 4 minutes of your mixer’s first speed and then for an additional 6 minutes on your mixer’s second speed, or until the dough is 95% developed. Now, incorporate dried mango, pineapple pieces, and shredded coconut and blend on low until combined. Maintain dough temperature at 78°F (25.5°C).
Once the dough is fully developed, do not allow it to rest. Immediately form dough into long ropes, about 1 in thick, and cut into 1 in (2.5 cm) pieces. Allow portioned dough pieces to proof for about 30 minutes.
Next, bake at 425°F (220°C) in a rack, deck or revolving oven, with steam. Bake for 15 to 18 minutes, or until golden brown. Remove from oven, let cool. Once cool, apply white icing and sprinkle with toasted coconut or brush with melted butter and roll in cinnamon sugar.
