Combine all ingredients in a spiral mixer and blend for 4 minutes on your mixer’s first speed and then for 6 minutes on your mixer’s second speed, or until fully developed. Maintain the dough temperature at 58°F (14.4°C).
Next, divide dough into 1.5 oz (42.5 g) portions and shape into rounds.
Then, blast freeze the dinner rolls for 20 minutes at -22°F (-30°C).
When ready to use, remove frozen rolls from freezer and place into a cooler to defrost overnight. Once thawed, proof rolls in a proofer set to 80°F (27°C) with 85-90% humidity for approximately 45 minutes.
Bake in a rack, deck or revolving oven set to 380°F (193°C) for 12-15 minutes or until buns turn golden. Remove from oven, brush with butter (optional) and let cool.
